EASTER BLUECORN & BLUEBERRY CAKE

Ingredients:

  • 150g bluecorn flour
  • 0.5 teaspoons of baking powder
  • 1 tablespoon of potato flour
  • 2 tablespoons of vanilla sugar
  • 70g of sugar
  • 50g butter
  • 4 eggs
  • 3 tablespoons of berry juice
  • 50g of blueberries

Preparation:

Sift flour and put into a bowl and then add baking powder and vanilla sugar. Separate the egg whites from the egg yolks and whip the egg whites until stiff. Add sugar to the whipped egg whites and mix until the sugar is thoroughly mixed. Then add egg yolks and mix for a while. Put the flour into the ready mass, mix it thoroughly and slowly with a spoon. Melt the butter and add blueberry juice. Pour it into the mass and mix gently until everything connects. Sprinkle the berries with potato flour and put into the mass and mix. Butter the baking pan and lightly sprinkle with flour. Pour the mass into the mold and put in the oven for 40 minutes. in 170 degrees.

After removing from the oven, decorate and enjoy!
