Tortilla with eggs, avocado and salmon

Flat cakes:

Preparation time 25 minutes. Cooking time 10 minutes.

Ingredients:

  • ¾ of glass of bluecorn flour
  • ¼ of glass of spelt flour
  • 160 mln of hot water
  • Pinch of salt
  • curcuma (possibly)

Bring water to boil and leave for 3-5 minutes.

Mix dry ingredients in a bowl. Pour hot water onto it and stir with a spoon. When water is mixed well with the other ingredients, start kneading the dough with hands for 5-10 minutes. Then, leave it for some minutes under cover.

Create flat cakes and fry on oil-free pan for 2 minutes on the bottom side and for 2 minutes on one side and for 1 minute on the other side.

Stuffing:

Preparation time 10 minutes

Ingredients:

  • 0.5 avocado
  • 3 garlic cloves
  • 200 g of smoked salmon or tuna
  • pepper
  • 4 eggs
  • Pinch of salt

Preparation:

Cut the avocado finely and smash. Add the chopped garlic and mix together. Fry scrambled eggs. Cut the pepper into thin bars and cut the salmon into small pieces. Spread avocado-garlic paste onto the tortilla cakes and put the scrambled eggs, salmon and pepper on. Tortilla may be served warm and cold.
