BLUE PASTA WITH SPINACH
- 400G of fresh spinach
- 200 g of bluecorn flour
- 2 eggs
- 5 spoons of water
- 2 garlic cloves
- A pinch of salt
Pour bluecorn flour into a high dish, make a small hole inside, add a pinch of salt and the eggs. Mix the ingredients by slowly adding lukewarm water. Knead the ingredients until smooth.
Put the prepared dough on Roll out a thin cake of the prepared dough and let it dry for about 10 minutes. Then cut the dough into thin strips and turn over to the other side for drying.
So prepared stripes put on lightly salted boiling water and cook about 3/4 min.
Strain the water from the pasta through a strainer.
Put a spinach in a pan with a little olive oil, add the pressed garlic and a pinch of salt to taste.
Fry for a moment and add it to the cooked pasta.
Mix thoroughly and the dish is ready.
