Gluten-free blue waffles

Ingredients:

  • 50g of bleucorn flour
  • 50g of rice flour
  • 50g of potato flour
  • 250ml of almond milk (tasty also with coconut and rice milk) or whole milk
  • 2 eggs
  • 50g of melted butter
  • 1 teaspoon of cane sugar
  • 1 teaspoon of vanilla sugar
  • 3/4 of teaspoon of baking powder
  • Pinch of Himalayan salt

Preparation:

Mix the flours, salt, baking powder, vanilla sugar and cane sugar all together in a bowl. Add milk, egg yolk and melted butter and mix until smooth. Put aside for 30 minutes. Meanwhile, whisk the egg whites until stiff and add to the mixture gradually to the mixture, mixing with a spoon. Heat up the waffle iron. Then, pour the mixture and fry the waffles for about 2.5-3 minutes.
