Pumpkin guacamole with Pyramids bluecorn

Ingredients (2 servings):
• 1/2 avocado
• 1/2 cup finely diced hokkaido pumpkin
• 1/2 lime juice
• 1 clove of garlic
• 1/2 spring onions or red onions
• 1/2 chili peppers
• 1 teaspoon coriander seeds, crushed in a mortar and pestle
• 1/2 bunch of coriander
• 1 tablespoon olive oil + 1 teaspoon baking pumpkin
• salt pepper
• Pyramids Bluecorn

Preparation:
• Preheat the oven to 200 degrees. Sprinkle the pumpkin lightly with oil and bake for 15-20 minutes until tender. Cool the pumpkin.
• Cut the avocados into cubes, onion into small cubes, similarly to chilli peppers. Mix with pumpkin and other ingredients.
• Serve ready guacamole with Pyramids bluecorn
