GEORGIAN CHEESE BREAD - KHACHAPURI

Ingredients:

Dough:

  • 20g yeast
  • 0.5 glass of warm water
  • 1 teaspoon of sugar
  • 2 glasses of bluecorn cornmeal
  • 1 glass of potato flour
  • 1 teaspoon of salt
  • 3 teaspoons of oil

Stuffing:

  • 150g Feta cheese
  • 125g mozzarella cheese

How to make:

Dissolve yeast in warm water, add sugar and sprinkle with flour. Put in a warm place to rise. Pour the other ingredients into a bowl and mix for a while. The risen yeast-dough, pour into a bowl, mixing slowly. Put the well-kneaded dough in a warm place for about 20 minutes. Mix well both types of cheese. Sprinkle the kneading board with flour and roll out the dough into four identical flat cakes. Spread mixed cheeses over both the round cakes and cover with the two others. Press the edges to seal both rounds of dough. Preheat the oven to 250 degrees and put the flat pieces of dough into the oven for about 25 minutes.
